Chocolate and Avocado Brownies

Makes 24 brownies 

  • 1-3/4 cups all-purpose flour 
  • 3/4 cup white sugar 
  • 3/4 cup brown sugar 
  • 3/4 cup unsweetened cocoa powder 
  • 1 teaspoon baking powder 
  • 3/4 teaspoon salt 
  • 1 cup mashed avocado, about 1 large 
  • 3/4 cup milk 
  • 2 tablespoons plant-based oil, plus more for greasing baking dish 
  • 1 teaspoon vanilla extract 

Preheat oven to 350 degrees F. Lightly grease a 9×13-inch baking dish with oil. 

Mix together the flour, sugars, cocoa powder, baking powder, and salt until well-combined. Set aside. Beat together the mashed avocado, milk, oil, and vanilla extract. Add the dry ingredients, mixing until just combined. Pour into the prepared baking dish and bake for 25-30 minutes, or until top has hardened, but center is still slightly soft.
